Most ice cream brands use the word "premium." Few define it. At Milwaukee Joe's, premium refers to a specific formulation standard, not a marketing label. In the United States, ice cream is categorized by butterfat percentage and overrun (the amount of air whipped into the base). Super-premium ice cream sits at the top of that range: more butterfat, less air, and whole ingredients in place of fillers, stabilizers, or artificial flavors.

The Science Behind Super Premium Vanilla Ice Cream
We don't thin our mix to cut costs, and we don't lean on stabilizers or gums to imitate texture. We start with a full-fat dairy base and control density where density is actually determined: at the churn.
Density in ice cream is a function of overrun, the amount of air incorporated during churning. Standard ice cream can run 90 to 100 percent overrun, meaning close to half the finished volume is air. Super-premium ice cream runs significantly lower. We churn ours to a target overrun that produces a scoop with structure and weight, dense enough to hold its shape on the spoon, not so dense that it's difficult to scoop.
The base itself is built from whole milk and cream sourced from Jersey cows, a breed whose milk is naturally richer in milkfat and protein than the average dairy breed. Paired with controlled overrun and whole ingredients, that base is what gives our vanilla its body, texture, and clean finish.
That is what super-premium means in practice: real dairy, controlled air, no shortcuts.
